Have you heard? An herbal extract is not the only way to deliver medicinal herbs to your body. Tea is an example. We have shared earlier blog posts about delicious herbal teas - the benefits of them, blending them, enjoying them, even bathing in them. BUT have you considered incorporating that fresh tea in a baked good instead, or infusing the herbs into another liquid?
Now let’s talk cookies. When I think of them, I instantly visualize a chunky chocolate chipper with a glass of ice-cold milk. Who doesn’t love that? But using our imagination and thinking outside the box….how about a refreshing lemonade cookie infused with summertime cooling herbs, such as Linden, Yarrow, and Anise Hyssop? Sounds delicious, right?!
Below is an out-of-the-box cookie recipe inspired by our delicious SUMMER HEAT Tea blend...perfect for hot weather and for a little fun in the kitchen!
SUMMER HEAT Lemon Cookies

Ingredients:
1 cup sugar
10 tablespoons unsalted butter
1/4 cup freshly squeezed lemon juice
1 tablespoon Summer Heat Tea Blend (from Prairie Star Botanicals)
2 teaspoons lemon zest
1 teaspoon vanilla extract
2 large eggs
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup powdered sugar
Directions:
Mix the lemon juice and Summer Heat Tea Blend. Infuse for at least 15 minutes. Strain into a bowl.
Cream the butter and sugar in your stand mixer until light and fluffy, about 2-3 minutes then add in the lemon zest, vanilla, egg, and the infused lemon juice, combine fully.
Sift the flour, baking powder and salt together then add it to the stand mixer on medium speed and mix until just combined.
Wrap the dough in saran wrap and refrigerate for at least two hours (preferably overnight), then when you're ready to bake, preheat the oven to 350 degrees.
Using a tablespoon scoop, drop tablespoon amounts into powdered sugar and roll until well covered then place onto a cookie sheet.
Bake for 9-11 minutes, do not brown the cookies, they’ll be soft when they come out and harden as they cool.
These cookies are delicious served up with a cold glass of fresh SUMMER HEAT sun tea, which I also made! This recipe is one example that shows there are many ways to use herbs in the kitchen. You might also infuse broth with herbs before making soup, or prepare a fresh salad dressing with herb-infused oil + vinegar, for example.
